Apologies for misreading the initial request, and it looks like some
good options were suggested.

Though it's not a drop in replacement for the 32kB slot in the CoCo3, I
invite folks to keep the SST39 series FLASH ROMs in mind.  They are 5V,
available in DIP format, have a really nice sector size (uniform 4kB),
and are well supported by programmers all over.

Not to be shaeful, but if you want a drop in replacement using the SST39
series FLASH, I've recently switched the ROM-el from the Atmel AT49F to
the SST39 series most recently and the 28 pin variant directly fits the
27C256 footprint:
