Two gpio pins would control two pia's, or 8255's each having 3x8 bit ports and 8255 has a port expander chip of which I forgot the part number.
Plenty I/O for simple on/off controlling.

I don't know if those adapters will work or not. Never tried one myself
and read that others have had mixed results.
I would say the MC-11 is probably not a great choice for control projects
since only 2 GPIO pins from the MCU and 1 from the CPLD are made available
externally.
