[Coco] How to get to 80-col mode on Coco 3?

Odd. Through the S-video converter, white looks quite blue. Light blue.

I noticed it first with the palette statements above, but also with
the CTL-ALT-RESET startup photo. It's absolutely blue.

Is that...normal?  Thanks.  (It's white via composite)
