Faster memory won't help with anything in a CoCo because the system is already designed to operate with no wait states.
Building a CoCo clone with a 68HC11 will result in a machine that won't be able to run any CoCo software. There are many differences between the instruction sets of the 09 and HC11, plus the fact that the HC11 does not have a U index register.
