If they _do_ happen to be CP/M disks, try to find a copy of Hypercross -
PC-based software that reads quite a few different CP/M formats.
There's also a few TRS-80 emulators that will read real TRS-80 disks, like
xtrs (or does that require a CatWeasel?) and (IIRC) Matthew Reid's emulator.

Yes, it's quite likely that simply dumping the disks sector-by-sector
won't give anything useful. Particularly for a highly-fragmented disk.
