It's alright to do more than one thing at a time but the key
to making it work is to document the process for any one
project so that if you drop it for a while you can pick it
up easier the next time you come to it. You should leave
detailed notes as if you are trying to explain it to someone
who knows nothing about what you are doing because in
a few weeks that is what you will be.
Another good habit is to store all the parts, materials, software,
and documentation in one place. For each project I have going
I have a "project box" which is just a cardboard box big
enough to hold everything pretaining to that project with the
name of the project stenziled on the side (like the army does). :)
If I temporarily move on to something else I store the box
on the shelf and come back to it later.
Even so you should also keep the number of projects to
a managable level or you will never complete them.
