The NitrOS-9 project is currently doing just that with two types of 
graphic fonts, IBM and isoLatin. If you want to change high res fonts 
for Disk Basic on a Coco3, you must alter of create new font tables to 
replace those at $F09D-$F39C.

Changing low res (WIDTH32) fonts on any Coco requires a hardware change 
so that the video display generator (MC6847 Coco1&2) has a new character 
set in ROM. This does not look possible on a Coco3.
